Monte operates inside Beehive Distilling at 2245 S. West Temple in South Salt Lake, an industrial-area address that Axios notes sits next to a fire extinguisher store, underscoring the restaurant's unassuming setting. Despite being open for less than a year at the time of its selection, the restaurant quickly built a reputation strong enough to catch Michelin's attention in the guide's very first cycle.

Chef Martín Babío leads the kitchen, drawing on his South American roots to craft a tasting menu that blends French, Italian and South American influences with Utah ingredients. Michelin's own description of the cuisine, cited by Fox 13, notes that these culinary traditions “weave in and out of view, as dishes arrive carefully presented and boldly flavored.” The restaurant's intimate scale, with fewer than 20 seats, places it closer to a chef's-counter experience than a traditional dining room, allowing Babío tight control over each seasonal offering.

One Michelin star signifies “high-quality cooking, worth a stop” under the guide's rating system. Monte's achievement is especially notable given that it is one of only five starred restaurants across the entire four-state Southwest region, placing it in rare company alongside four Las Vegas establishments.

Nine Utah Restaurants Recognized Across Three Tiers

Beyond Monte's star, Michelin recognized eight additional Utah restaurants across two other categories, bringing the state's total selections to nine. Three restaurants received Bib Gourmand distinction, Michelin's designation for “great food at a great price”: Feldman's Deli in Salt Lake City, One More Noodle House in South Salt Lake, and Phở 777 in West Valley City.

Five additional restaurants earned Recommended status, meaning they were selected for the guide without receiving a star or Bib Gourmand designation. These include Handle and Matilda in Park City, The Nelson Cottage by High West also in Park City, along with Koyote and Star of India in Salt Lake City. The Nelson Cottage is an offshoot of High West Distillery, known for set-menu suppers paired with whiskey selections, while Handle and Matilda represent Park City's higher-end dining offerings.

The geographic spread of these nine selections highlights two distinct culinary hubs: the Salt Lake Valley, encompassing Salt Lake City, South Salt Lake and West Valley City, and the Park City and Wasatch Back area. Commentators noted that the mix of high-end tasting menus alongside affordable neighborhood spots like Feldman's Deli and Phở 777 suggests Michelin recognized both depth and diversity in Utah's restaurant scene.

Utah's Emergence Alongside a Reshaped Regional Map

The inaugural Southwest guide's results carried significance beyond Utah's borders. Las Vegas, which Michelin returned to after a 17-year absence, dominated the starred category with four restaurants, while Arizona and New Mexico received no stars at all in this first selection. Utah's single star therefore placed it in an unexpected position, sharing the spotlight with Las Vegas rather than trailing behind it.

Local commentary framed this outcome as evidence that Utah's culinary scene has matured to a level competitive on a national stage. Gastronomic Salt Lake City suggested the recognition could reshape how food travelers view Utah, given that starred destinations in the broader region had previously been concentrated almost entirely in Las Vegas.

At the Las Vegas ceremony, Monte's rapid ascent drew attention even before the full list circulated. Coverage cited a description of the restaurant as having quickly become “one of the region's most exciting dining destinations,” despite being open for less than a year. Utah broadcasters and print outlets characterized the star and accompanying Bib Gourmand and Recommended honors as significant validation from a guide long considered the standard-bearer for dining excellence.
